Honey Ginger Teriyaki Chicken

Honey Ginger Teriyaki Chicken

Ingredients

¼ cup honey
¼ cup sauce
2 Tbs. brown sugar
1 Tbs. fresh ginger
1 Tbs. garlic
1 Tbs. Heinz 57
¼ tsp. paprika
¼ tsp. cinnamon

Directions

1. Combine all the ingredients in a bowl and mix it well.
2. Marinate chicken in this all day and then BBQ or bake if it's winter.

Stuffed Shells


Ingredients

6 ozs. Jumbo pasta shells

1 egg, beaten

16 oz. ricotta cheese

½ lb. shredded mozzarella

¼ lb. shredded Parmesan

1 ½ tsp. basil

1 tsp. salt

1 jar pasta sauce


Directions


1. Preheat oven to 350 degrees.

2. Bring large pot of water to boil and add pasta. Cook until al dente.

3. Mix all other ingredients together except pasta sauce.

4. Stuff the shells with the cheese mixture.

5. Place the stuffed shells in a 9X13 inch baking pan.

6. Pour pasta sauce over shells.

7. Bake for 45 minutes or until bubbly.

8. Add extra mozzarella for topping and continue to bake until melted.

Pumpkin Cake

This was a hit. And I like it!

Pumpkin Cake

2 cups sugar
4 eggs
2 1/2 cups all purpose flour
2 tsp. baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 cup vegetable oil
1 15 ounce can of Libby's pumpkin

Mix the eggs and sugar until light and fluffy.
Sift together dry ingredients and add alternately with vegetable. Mix well after each addition.
Add pumpkin and mix.

Bake at 300 degrees for 50-60 minutes. Let cool completely.

Cream Cheese Frosting
1/4 cup butter
8 oz. cream cheese
3 1/2 cups confectionary sugar
1 tsp. vanilla

Mix together and put on cake!

By request: Blondies!

Blondies

1/2 cup and 2 Tbs butter or margarine
2 cups brown sugar
2 eggs
1 1/2 tsp. vanilla
2 cups all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt

You can cook them like this or add in nuts, chocolate chips, butterscotch chips, whatever you want!

Beat the butter, brown sugar, eggs, and vanilla until well blended. Add flour, baking powder, and salt. Mix. Add in the nuts or chips. Mix again.

Press dough into 13 X 9 inch greased and floured pan. Bake at 350 for 20-25 minutes. Cool in pan, then cut into squares. Enjoy!

The Real Thing

So long cream cheese! Hello the real thing!

Thanks to my friend, Carla Ray, I have received a recipe for an actual Italian tradition, which really isn't called alfredo at all. And, did I really need a recipe, probably not with just two ingredients! Who knew, right?

Apparently, Italians have been eating just butter and Parmesan cheese on noodles for a long time. So simple, so good, yum yum.

And homemade fettuccine doesn't hurt much either! (Have I mentioned that I love my I pasta maker, recently? Cause I do!!)

So, here's the recipe. Got a pen? It's a long one.

1/4 pound Parmesan cheese (I used block Parmesan and shredded it)
1 stick of butter
A little pasta water, you be the judge

Mix, mix, mix and then stir together with fettuccine.

Then eat blonde brownies. My Kitchen Aide got a work out tonight!

Well well well, didn't I say I was going to keep this updated?

I do have good news. Juniper has stayed fenced in for a whole week! De did it! He struggled getting that fence up and running and figuring out Juniper's secret sneak-out spots. But, I think he did it. We cut Juniper off cold turkey from the porch. Her new 'special spot' (used to be on top of the chair on the deck) is beside the pine tree, the closest
space to the house.

A Snowy Day Walk

Today Rollo and I went for a snow walk and took some pictures. Well, she hunted for rabbits and mice while I took pictures. My fingers were very cold by the time we came in, but I had a great time surveying our land covered in snow. What a blast (of cold, fresh air)!
This swing hasn't been swung since fall. Love the spot of color in this one.


Juniper is begging for some sweet feed! She goes crazy over it.


It looks like they are wearing hats made of snow.

Funny story from today:

De likes to go outside with his gun. He thinks that is fun. He was going to try and get a rabbit for me to cook. (just kidding) But, Rollo has been digging for rabbits. So, he goes out with his shot gun. He's wearing one of those hats with flaps and fur on it (kind of like daniel boone) and his coveralls, carrying his shotgun. He starts walking real fast down our steps towards the drive way. When he looks up our neighbor from down the street who NEVER comes to visit is standing there with his hands up saying "don't shoot, don't shoot," being very serious. He thought De was coming out to greet a stranger and scare him off. Really he just wanted to know if we knew a good place he could take his daughters sledding. Wonder if he will ever call upon us again?



Gotta go, homemade bread is almost done in the bread maker. Then potato soup! YUM!

Pesto and the Snow


Boy, it's cold out there. And cold in here since we only have our heat at 68 to save $$$$$. Gotta save up for our next trip. How exciting!

But, for now what is exciting is the whole wheat pasta and pesto I made this evening. And, it's healthy... whole wheat. It was so fun using the pasta roller again. I am going to try and use it every week at least once. De sure picked a great present.

Here is my recipe for pesto. I am going to guesstimate on the quantities; I usually don't measure this one out. You really have to make it to taste. We had some basil that we grew in our garden this year; we freezed it, just to see if we could use it during the fall and winter.

3-4 Tbs. minced garlic
5 Tbs. minced pine nuts
4 Tbs. olive oil
2 cups of basil (at most, I usually use less.)
1/4 cup shredded parmesan cheese
Salt and Pepper (to taste)

Pour a small amount of olive oil in a saucepan. Put in the garlic and pine nuts. When the garlic turns brown, take it off and put in a bowl. Add the olive oil, salt and pepper.

I usually let that cool while I cook some pasta. Once the pasta is done, strain the noodles. Add the pesto and cheese to the noodles and stir.

This should make about 2 servings.

De said "I have never tasted anything like this before. In a good way."

We are loooong like spaghetti!

Chicken Divan - Divine

Tonight's meal: Chicken Divan! I LOVE chicken Divan!

Every-time I have made chicken divan in the past, I have always been disappointed because the broccoli comes out mushy. I tried to avoid that this time and I was successful! They were nice and crisp!

Here is my recipe for Chicken Divan:

Chicken Breast Tenderloins (about a pound)
1 Can of Cream of Chicken Soup**
1 Can of Cheddar Cheese Soup
Broccoli (as much as you like!)
1 Cup Shredded Cheddar Cheese
Roll of Ritz Crackers
3 Tbs. Butter

Preheat the oven for 350 degrees.
Boil the chicken until done. Drain and shred apart. At the same time, steam the broccoli for about 5 minutes. Don't cook it until it is soft; you are going to put it in the oven.
Combine soups and cheddar cheese. Do NOT add water to the soups as it says on the can.
Combine the soup mixture, shredded chicken, and broccoli in a casserole pan.
Melt the butter. Crumble the crackers into the butter and mix. Sprinkle all over the top of the mixture in the casserole pan.
Bake for about 25 minutes until the edges are bubbling. Watch and make sure the crackers don't get too brown.
ENJOY!

**If you don't have cream of chicken soup as I sadly discovered after getting back from the grocery (I got cream of mushroom instead, yuck!) you can make your own. Melt three Tbs. butter, add about 4 Tbs. flour and stir constantly for one minute. Add a cup of water and a chicken bouillon cube. Stir until thickened and bouillon cube is dissolved.

What De had to say:

"The broccoli was very very good because normally people overcook the broccoli, so it was perfect. The cheese was very good, and it was baked to a perfect crisp on top. I am going to eat some for lunch tomorrow."

I forgot to post a picture of it as it came out of the oven, I will try to do that for other recipes.
