Pumpkin Cake

This was a hit. And I like it!

Pumpkin Cake

2 cups sugar
4 eggs
2 1/2 cups all purpose flour
2 tsp. baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 cup vegetable oil
1 15 ounce can of Libby's pumpkin

Mix the eggs and sugar until light and fluffy.
Sift together dry ingredients and add alternately with vegetable. Mix well after each addition.
Add pumpkin and mix.

Bake at 300 degrees for 50-60 minutes. Let cool completely.

Cream Cheese Frosting
1/4 cup butter
8 oz. cream cheese
3 1/2 cups confectionary sugar
1 tsp. vanilla

Mix together and put on cake!
